Chocolate Spice Cake
Serves 12
Ingredients:
2 cups sugar
½ cup butter, softened
2 eggs, separated
3 cups all-purpose flour
3 tablespoons unsweetened cocoa powder
2 teaspoons baking soda
2 to 3 teaspoons ground cinnamon, or to taste
½ teaspoon ground nutmeg
¼ teaspoon salt
2 cups buttermilk
1 teaspoon vanilla extract
1 recipe Buttercream Frosting (page 198)
The aromas of cinnamon and nutmeg smell so enticing while this cake is baking.
Directions:
Preheat the oven to 350℉. Grease a 9 x 13-inch baking pan.
Cream together the sugar and butter. Beat the egg yolks, and add to the creamed mixture. Sift together the flour, cocoa, baking soda, cinnamon, nutmeg, and salt twice, and add to the creamed mixture alternately with the buttermilk, mixing after each addition. Stir in the vanilla. Beat the egg whites until stiff, and fold into the batter. Pour into the prepared pan.
Bake for 50 minutes. Cool before frosting with Buttercream Frosting.
To Serve
Cut into serving-size squares and enjoy.
